Greek Yogurt Pancakes

The perfect addition to a well balanced protein breakfast

INGREDIENTS

2 eggs

1 cup plain greek yogurt

3/4 cup almond milk

1 teaspoon vanilla extract

1 cup flour

1 TBSP coconut sugar (optional)

2 teaspoons baking powder 1/2 teaspoon salt

Dark chocolate chips (optional)

Blueberries (optional)

DIRECTIONS

Whisk eggs, greek yogurt, vanilla, and milk together until well combined. Add flour, baking powder, salt and sugar, if desired, and whisk again until a smooth batter forms.

Drop by 1/3 cup onto heated griddle coated with cooking spray. Sprinkle on add-ons at this point if desired. Cook until small bubbles form on top of pancake. Flip and continue cooking on the other side until golden brown.

Serve warm with more blueberries, maple syrup or other toppings.
